Text Box: Organic Carrot Soup
Text Box: Combine broth, carrots, salt and potato in a large pot and bring to a boil.  Reduce heat, simmer 15 minutes.  In a separate pan, sauté onion, garlic and cashews in butter.  Add onion mixture to soup pot, and blend until smooth (use an immersion blender or transfer to a blender or food processor).  Whisk in rice milk, basil and thyme.
This is a vegetarian recipe that can be made completely organic by using only organic ingredients!

4 c vegetable broth
1 1/2 tsp salt
1 medium potato
2 tbsp butter
1 c chopped onion
2 cloves garlic, crushed
1/3 c crushed cashews
